After ageing in a special cement tank and blending Chardonnay and Riesling, we have produced a wine that goes from mineral to syrupy and creamy. A very special white wine, to be enjoyed at leisure.
Minimum order 6 bottles, freely combinable
Fermentation at controlled temperature in stainless steel tanks.
Time of aging: 9 months in ovoid natural cement tank on its own lees with weekly “battonage”.
Time of aging in bottle: minimum 3 months.
Pale yellow with greenish tones, clean and bright
At the beginning, perception of notes of fennel, dried flowers and aromatic herbs, reminiscent of the Mediterranean garrigue. As it evolves, ripe fruit appears with notes of peach in syrup with some notes of nuts and a honeyed touch of white flowers.
It is a dry wine with a smooth entry, but with a body that fills your palate. Pleasant acidity that persists throughout the palate, seducing you to have another glass.
A persistent finish with a certain salinity and fresh aftertaste, with retro-nasal aromas of fennel and aromatic herbs.
